钟水饺
钟水饺始于光绪十九年,创始人钟少白,原店名叫“协森茂”,1931年开始挂出了“荔枝巷钟水饺”的招牌。以其风味蜚声海内外,是成都小吃。
水饺,古名为“水角”,北方人读“角”为“佼”音,故称“水饺”。水饺是北方人常用的食品,馅心用蔬菜多于用肉食,但逢年过节时,馅心也十分考究。在四川,水饺只是作为一种小吃,因此馅心多用肉制作,制作也讲究得多,配上的好汤和调料,互相补充,相得益彰。以前,成都卖水饺的摊店不少,其中以“钟水饺”为有名,这是因其水饺皮薄、馅嫩、味美之故。
钟水饺在成都有很多家分店,每天的顾客都不少。偶尔我也会贪吃去吃上一次,每次吃了都觉得很满足。外地游客来成都都会去钟水饺品尝这份美味,这次我在家自己做钟水饺加了韭菜,味道更好吃。今天和大家分享这款钟水饺,简单又好吃。

Steps to make 钟水饺

  • 1.猪肉去皮剁碎。
  • 2.韭菜切细碎加入肉末中,1勺生抽和鸡蛋加入混合均匀。
  • 3.取一张饺子皮,包入适量的馅儿。
  • 4.将饺子包好捏紧口。
  • 5.焖烧杯开水预热5分钟。
  • 6.饺子放入焖烧杯中,加入适量的开水,焖30分钟至饺子熟透。
  • 7.蒜压泥,加入生抽,香油和细砂糖加入碗中。
  • 8.熟透的饺子捞出装碗中,加入辣椒油拌均匀。
