凉拌土豆丝和秘制凉拌汁
这款凉拌汁,一次多做些,适合像莴笋,黄瓜这种比较脆脆的蔬菜。香料油可以用家里炸东西的费油,节约口感也一样。

  • 葱末各一汤匙
  • 虾皮各半汤匙

Steps to make 凉拌土豆丝和秘制凉拌汁

  • 1.凉油和花椒,八角,干红辣椒,香叶(没有可以不放)一起烧,中火。
  • 2.烧到油七成热(判断方法,筷子插进油里,周围很多小泡)改小火,到辣椒变的红亮,关火(千万别熬焦了啊,目测辣椒比希望的颜色浅的时候就关火,油凉下来的过程还在炸)。
  • 3.虾皮,芝麻,葱姜蒜泥混合在一起,加一茶匙咖喱粉,一茶匙孜然粉,半茶匙盐,搅拌好。
  • 4.香料又滤一些出来,继续熬,到冒青烟,端下来(小心,别沾到凉水)凉五秒。
  • 5.一点一点的浇进去,并搅拌,不能一下子倒进去,会溢出,容器也要深一些,比食材深。
  • 6.土豆,青椒,胡萝卜切丝焯水,捞出过凉水,用纯净水洗一次(干净卫生)。
  • 7.加一茶匙盐,半茶匙糖,半茶匙味精,两茶匙白醋,两茶匙秘制调料,拌均匀。
  • 8.装盘,在菜上加一点稠的料汁即可,可以自己点缀,设计盘子花边,我懒,就没做。
