紫苏馅月饼
心心相念的紫苏馅,每年中秋都会搬上餐桌,家人的大爱,为此每年姐姐都要种上几颗紫苏,只为中秋的月饼味道更纯正,这绿色的美味真是百吃不厌。

  • 易小焙广式月饼预拌粉200g
  • 转化糖浆150g
  • 色拉油50g
  • 紫苏花生馅600g
  • 蛋黄1个

Steps to make 紫苏馅月饼

  • 1.备齐材料
  • 2.将转化糖浆、色拉油放在容器里充分搅拌至乳化状态
  • 3.筛入预拌粉
  • 4.切拌成面团后装入食品袋揉匀静止
  • 5.备好的紫苏花生馅30g一个,静止好的面团分成20g一个的小剂子揉圆
  • 6.带一次性手套,取一个面团压扁后包入馅,虎口慢慢向上推移,使面皮均匀的包裹住馅料,收口搓圆
  • 7.放入模具挤压成型,如果不易脱模,放入模具之前模具薄薄的刷点油
  • 8.码入烤盘喷一点点清水
  • 9.烤箱上下火180度预热,入烤箱中层烤10分钟
  • 10.蛋黄少兑一点水,取出月饼,薄薄的刷一层蛋黄液,四周不刷,入烤箱继续烤10分钟左右
  • 11.出炉,晾凉密封保存,等待回油变软即可食用。
