让人食欲大开的孜然炒肉

  • 羊肉400克
  • 青椒3个
  • 大葱2克
  • 香菜3根
  • 味达美臻品料酒1勺
  • 味达美冰糖老抽1勺
  • 六月鲜轻盐酱油3勺
  • 孜然50克
  • 生姜粉1勺
  • 黑胡椒粉2勺
  • 辣椒粉3勺
  • 2勺

Steps to make 让人食欲大开的孜然炒肉

  • 1.孜然要炒一下香味才更浓郁。锅中倒入孜然粒,开小火慢慢炒,炒至香味溢出、颜色变深,放案板上,用擀面杖简单碾称成颗粒和粉装混合物,备用。
  • 2.羊肉(没有的话牛肉、猪肉都可以,家里有什么用什么)洗净切丝。
  • 3.加入1勺酱油、1勺料酒、1勺老抽。再放入1/3炒好孜然、1勺生姜粉、1勺辣椒粉、2勺橄榄油(炒菜用的油也可)用手抓匀,腌制15分钟。
  • 4.大葱切丝,葱多一点好吃,选用洋葱也不错。香菜切段。辣椒切丝,绿辣椒最好选有辣度的辣椒和线椒一起用,吃着才过瘾。
  • 5.用菜籽油炒,油比平时炒菜多,待油温热时下入肉丝滑炒变色。
  • 6.放入葱丝,炒香。
  • 7.加1勺黑胡椒粉、2勺辣椒粉、2勺盐,剩余的孜然,大火炒出香味。
  • 8.加入2勺酱油,炒匀。
  • 9.加入辣椒丝,继续大火炒。
  • 10.把辣椒炒断生。
  • 11.加入香菜,炒匀出锅。
  • 12.一口下去,滑嫩的肉丝、脆爽的青椒,颗粒感的的孜然,咸鲜香辣,吃着真是爽快。
  • 13.在我们西安夜市上,这道孜然炒肉非常受欢迎,夹在白吉馍里或者做盖浇饭,鲜香诱人,非常有特色。
