腊味芋头糕
前段时间遇上香芋特价,买了2个大芋头,一个做菜吃了,另一个用来做了芋头糕。芋头糕,萝卜糕都是我最拿手的,因为小时候妈妈常做这些糕点,那时是自己磨米浆做,现在更方便了,买包粘米粉就可以做,可是我老觉得没有磨的好吃。

  • 粘米粉454克
  • 香芋1个
  • 香菇10朵
  • 虾米半碗
  • 腊肠4根
  • 鸡汤1罐(396克)
  • 玉米油2大匙
  • 2茶匙
  • 1茶匙
  • 鸡精1/2茶匙
  • 1250ml

Steps to make 腊味芋头糕

  • 1.香菇用水泡发,切小丁。
  • 2.虾米洗净,用1杯水(250ml)泡软,泡的水留用。
  • 3.香芋去皮切小丁。
  • 4.腊肠切小丁,虾米切碎备用。
  • 5.热油锅,把腊肠和虾米爆出香味。
  • 6.下香菇炒香。
  • 7.下香芋丁炒匀。
  • 8.倒入1罐鸡汤和泡虾米的水煮至芋头软烂。
  • 9.放盐,糖和鸡精调味。(味道可以稍咸一点。)
  • 10.煮芋头的同时,用1000ml的水把粘米粉调至无颗粒的浆状。
  • 11.把煮好的芋头放入,拌匀。(此时可以试试味道,不够咸的可以再调味。
  • 12.倒入抹油的盘里。
  • 13.锅放水烧开,把盛有芋头米浆的盘放入,大火蒸40分钟即可,凉后就可切块吃了。
  • 14.凉后切片煎至金黄更好,可惜家人这几天上火兼咳嗽,所以没敢煎来吃,就切块吃已经很好吃了。
