  • 冰蛋液40克
  • 冰水110克
  • 燕子快速酵母2克
  • 全蛋液10克涂面胚
  • 细砂糖20克

Steps to make 黑芝麻土司

  • 1.先把冰蛋液、酵母粉、白砂糖放面包机里搅拌10秒
  • 2.加高筋面粉、冰水水不要一次全部倒进去,要预留5-10克,看面团干湿程度决定加不加。
  • 3.面包机欧式面包档搅10分钟后的样子
  • 4.加入有盐黄油,欧式面包档再搅10分钟,时间到后,按停,然后按一次和面档(6档)搅15分钟
  • 5.揉至扩展阶段
  • 6.加入黑芝麻粉揉匀
  • 7.搁盆里,覆上保鲜膜发酵至两倍大
  • 8.发好的面团取出揉5分钟排气,称重分割成三块滚圆,再醒15分钟
  • 9.擀成牛舌状后,卷起来
  • 10.放土司盒里,先放中间一块,再放旁边两块。
  • 11.烤箱里放一碗开水,调至发酵档,发酵至1.5倍大时涂全蛋液,然后放回箱中再发至两倍大取出。烤箱180°预热5分钟后,把吐司模放中下层,不盖盖180度烤30分钟。10-15分钟时面包面上就上色了,这时要把土司盖盖上
  • 12.时间一到,立即取出脱模
