Steps to make 辣子鸡丁

  • 1.鸡肉斩丁,尽量斩的小点。
  • 2.鸡肉放入沸水锅中焯至没有血水,捞出洗干净控水。
  • 3.放入一个碗中,加入一勺生抽,一勺老抽拌匀腌制15分钟。
  • 4.杭椒小米辣切丁,姜切片,蒜拍碎,葱白两段。
  • 5.锅洗净烧热放入适量食用油,比平时炒菜多一些。
  • 6.烧至八成热,放入鸡肉丁翻炒片刻。
  • 7.炒到鸡肉外皮金黄,放入姜蒜,小米辣花椒炒出香味。
  • 8.放入杭椒丁翻炒均匀。
  • 9.分别调入小勺盐,鸡精翻炒均匀即可出锅。
