端午粽飘香——水晶紫薯糯米粽

    Steps to make 端午粽飘香——水晶紫薯糯米粽

    • 1.先把紫薯煮熟,稍晾。
    • 2.制成泥状,撒上白糖和油用手抓匀。
    • 3.分成均匀大小剂子,搓成椭圆形。
    • 4.将买来的粽叶刷洗几遍,入凉水煮沸,保持煮开约20分钟。捞出放入水中浸泡一夜(水量没过粽叶),用时提前取出控干水分。
    • 5.糯米洗净,提前浸泡一晚。
    • 6.准备包制:取一片完整的粽叶,如图折叠好。
    • 7.取适量米填入粽叶。
    • 8.放上紫薯馅。
    • 9.再盖上一层糯米压实。
    • 10.将粽叶的两端保持交叠,反向折回盖在糯米上,且一定要压紧实。这是调整粽子形状,保证不漏米的关键步骤。
    • 11.最后调整粽叶末端,多余部分可剪掉,用棉线捆扎结实。
    • 12.热水下锅,水量一定要没过粽子!开锅后保持中大火1小时,再转小火焖煮1小时即可。
    • 13.煮好的粽子比较烫,吃之前最好捞出晾一下。
