  • 色拉油40克
  • 鸡蛋3个
  • 牛奶40克

Steps to make 戚风蛋糕

  • 1.准备所需食材
  • 2.蛋清和蛋黄分离,蛋黄中加入10克白砂糖,用打蛋器搅拌,至白砂糖充分溶解
  • 3.分三次加入色拉油,搅拌至色拉油和蛋黄液充分融合
  • 4.分三次加入牛奶,至充分融合均匀
  • 5.低筋粉过筛加入混合的蛋黄液中,
  • 6.用打蛋器搅拌至无颗粒,放到一旁待用
  • 7.用手持搅拌器打至蛋白有鱼眼泡,加入几滴白醋和加入剩余白糖的三分之一,继续搅打呈现肥皂沫状加入三分之一白糖继续搅打
  • 8.搅打至蛋白出现纹路加入最后三分之一白糖打至出现小尖角(干性泡发)
  • 9.取三分之一蛋白加入蛋黄糊中,用刮刀上下搅拌均匀
  • 10.蛋黄糊倒入蛋白中,上下搅拌均匀,且未画圈搅拌
  • 11.倒入六寸模具中,轻镇几下,震出气泡,用刮刀抹平表面
  • 12.烤箱预热10分钟,上火150度,下火135度,烘烤30分钟,调至上火170度,下火15度,烤20分钟即可,出炉后轻震几下,倒扣,冷却后脱模。
  • 13.巧克力隔温水融化,放入裱花袋中
  • 14.取适量草莓果酱放入到用巧克力制作的树干中,形状可随意发挥
