红烧狮子头

  • 莲藕半节

  • 鹌鹑蛋四个
  • 娃娃菜一颗
  • 小葱少许
  • 红烧酱油2勺
  • 冰糖15g
  • 生抽少许
  • 淀粉少许
  • 鸡精一点
  • 五香粉一点
  • 八角两个

Steps to make 红烧狮子头

  • 1.肉去皮,姜备好。
  • 2.把姜片加入肉块,用刀一起剁成肉糜。
  • 3.剁成这样即可。
  • 4.莲藕去皮,剁碎。
  • 5.肉馅藕碎放一起,加入五香粉,一点盐,一点鸡精,一点生抽。
  • 6.加入10克淀粉,充分拌均匀,让肉馅上劲。
  • 7.取适量肉馅包上一个鹌鹑蛋。
  • 8.再用两只手不断左右团圆成形。
  • 9.放入大汤勺。
  • 10.再轻轻滑入烧好的油锅,炸。
  • 11.炸到丸子表面上色即可。
  • 12.热锅温油,放入冰糖。
  • 13.冰糖炒化后放入八角和小葱。
  • 14.放入红烧酱油和生抽。
  • 15.加入适量水。
  • 16.水烧开后,轻轻放入炸好的丸子。
  • 17.小火慢炖四十分钟。
  • 18.洗净的娃娃菜,入开水锅里焯烫至熟。
  • 19.捞出沥干水分,摆盘。
  • 20.丸子炖好后,捞出,锅里用剩余汤汁来勾芡。
  • 21.加入少许水淀粉。
  • 22.再次烧开后,汤汁浓郁即可。
  • 23.把汤汁浇在狮子头上即可。
  • 24.非常好吃的红烧狮子头。
