  • 1.排骨剁小块。
  • 2.清水加入排骨,准备焯水。
  • 3.水开后打掉血沫,保持开锅两分钟。
  • 4.糖醋汁按比例兑好,搅拌均匀至糖化开。
  • 5.热锅温油,放入排骨小火煎一下。
  • 6.煎到稍微收紧即可。
  • 7.留底油,放入葱姜丝,翻炒。
  • 8.再次倒入排骨,翻炒。
  • 9.加入糖醋汁。
  • 10.烧开后,改小火,慢炖。
  • 11.盖上盖子小火炖煮,直到汤汁收得差不多,一共大约个把小时。
  • 12.出锅撒白芝麻,肉质软烂,酸甜可口。
  • 13.色泽鲜艳。
