香醇在舌尖缭绕---小山布丁
焦糖布丁的方子很多,大抵是原材料的配比变化,鸡蛋、牛奶和鲜奶油这几样原材料的比例变化创造出微妙的质地和口感的差别。
小山布丁--初见,很普通的一款布丁。但一勺入口,香醇就在舌尖滑过,足已颠覆了我对布丁的印象,吃过就难以忘怀的味道......

  • 纯牛奶510毫升
  • 砂糖66克
  • 鲜奶油180毫升
  • 蛋黄60克
  • 全蛋30克
  • 香草豆荚1/2根

Steps to make 香醇在舌尖缭绕---小山布丁

  • 1.焦糖酱倒入布丁瓶中。
  • 2.香草籽连同豆荚用刀削成碎末,一起放入牛奶锅中;用小火加热至微沸后离火,盖上盖子,焖5-8分钟。
  • 3.用筛网过滤冷却的香草牛奶液。
  • 4.鲜奶油中加入砂糖以中火加热到80度,离火备用。
  • 5.蛋黄、全蛋混合打至均匀,慢慢注入牛奶液、奶油,搅匀。
  • 6.再将搅匀的鸡蛋牛奶液用干净的纱布过滤杂质。
  • 7.布丁液倒入瓶中,烤盘中注水,烤箱预热150°
  • 8.上下火、烤箱最底层,烤制60分钟。
  • 9.烤好后立即从热水中取出降温,入冰箱冷藏。
