主妇独家秘制台湾经典美味--台式三杯鸡
没上菜之前先来说说做这道菜遇到的事:
话说这道菜我向往了很久,也期待了很久,迟迟未动手的原因是没有九层塔,超市没见着,菜场也没找到,九层塔对我来说成了很难觅的香料!做三杯鸡的愿望就一直悬着,九层塔与三杯鸡的关系,毫不夸张的说,那是三杯鸡味道的精妙之处,没有九层塔何以成就完美的三杯鸡?

直到有那么一天,一个非常偶然的机会让我得到了梦寐以求的九层塔,真心的感谢呀!拿到新鲜采摘的九层塔时,一股浓郁的香料味即刻而来,手过久久留香!

因为有了新鲜的九层塔,就有了我今天这道台式三杯鸡!

  • 酱油适量(生抽)
  • 米酒适量(老酒)

Steps to make 主妇独家秘制台湾经典美味--台式三杯鸡

  • 1.食材准备:新鲜三黄鸡一只
  • 2.九层塔若干
  • 3.姜蒜,冰糖若干酱油(生抽),米酒(老酒)和香油
  • 4.食材加工:整鸡斩块
  • 5.做法与过程:油锅加热
  • 6.下斩过的鸡块翻炒
  • 7.鸡肉变黄时即可盛出待用
  • 8.准备一个干净的瓦煲
  • 9.加入一杯酱油(生抽)100ml,一杯米酒(老酒)100ml,一杯香油5ml(因为鸡本身有油,故减少的香油的量,不然怕太油腻了)
  • 10.放入炒制过的鸡块,拌匀后焖烧
  • 11.15分钟后换之铁锅收汁
  • 12.汤汁快收干时,撒入九层塔
  • 13.盖上锅盖焖一下1-2分钟
  • 14.翻拌均与后即可出锅
  • 15.台式三杯鸡出锅啦
