花样紫薯面包
花样紫薯卷造型美观,香甜可口,很受家人的喜欢。上星期做的是中式蒸点,今天再接再厉,按同一花样做一款西式面点---花样紫薯面包。

Details of ingredients

  • 高筋粉300克
  • 奶粉15克
  • 牛奶140克(根据面粉吸水性增减)
  • 玉米油20克
  • 酵母3克
  • 40克
  • 鸡蛋1个
  • 1克
  • 紫薯椰蓉馅200克
  • 椰蓉沙拉酱少许

Steps to make 花样紫薯面包

  • 1.准备好所有食材。
  • 2.将高筋粉、奶粉、鸡蛋、糖、盐混合成面团,揉至糖完全融合后,加入酵母揉至出粗膜。
  • 3.分5次加入玉米油(每次将油与面团揉匀后再另加入油,要少量逐步加入油才能揉匀)揉至完全扩展状态(出薄膜)。
  • 4.面团置温暖处进行基础发酵至2-2.5倍大。
  • 5.反复揉面排气。
  • 6.将面团分成均匀的剂子,依次排气滚圆,盖保鲜膜室温松弛15-20分钟。
  • 7.将醒发好的小面团按扁后放入紫薯椰蓉馅,收口捏紧。
  • 8.按扁后慢慢擀成稍长些的椭圆形,不可过度用力,防止擀破馅料露出,然后用锋利的刀片小心地在面团上切割,切成均匀的切口,只划破一层表皮。
  • 9.面饼翻面,卷成圆柱状,底边朝下,防止发酵时张开。
  • 10.圈成圆,两头对接,捏紧(把其中一头卷紧些,插入另一头捏紧捏实。)。
  • 11.放入铺上油纸的烤盘,置温暖处进行二次发酵至二倍大,刷全蛋液,撒芝麻,沿顶部挤二圈椰蓉沙拉酱。
  • 12.放入烤箱130度,中下层,烤18-22分钟。面包烤熟后,稍晾凉,装入保鲜袋。
