Steps to make 紹興醉雞

  • 1.準備一隻去骨的雞腿洗淨切開
  • 2.將腿肉表面的筋切斷.斜劃數刀.正反面都均於抹上鹽跟少許料酒..可以適量的灑上些魚露
  • 3.用鋁箔紙將雞腿捲起慢慢往前推使雞腿變成一個圓柱體
  • 4.在鋁箔紙上用牙籤扎幾個洞.沒有鋁箔紙也可以用繩子綁好定型
  • 5.放入預熱好的蒸鍋蒸20分鐘
  • 6.乘著空檔將半錢當歸枸杞一及適量的冰糖加1碗水煮滾
  • 7.滾好的湯一定要放涼
  • 8.放入一個容器
  • 9.水跟紹興酒以1比1的比例放,想要酒味淡一點的可以少放點酒
  • 10.蒸好的雞腿取下鋁箔紙待涼
  • 11.泡入調好酒的容器內密封放入冰箱
  • 12.冰越久酒味越香濃,中途要幫忙翻動幾次,3或五個小時就可以切片吃了,冰一個晚上更讚
