酱香虾仁肠粉

Steps to make 酱香虾仁肠粉

  • 1.虾仁去虾线清水中加白醋浸泡去腥。
  • 2.虾仁切小丁,加少许胡椒粉和盐,再放1勺蛤蜊酱。这个酱是辣味的,如果喜欢吃辣,可以放2小勺,就无需放盐和胡椒粉了。
  • 3.放点青橄榄叶拌均匀。
  • 4.再用姜末,醋,生抽和蛤蜊酱调一个淋酱。
  • 5.肠粉专用粉加水搅拌均匀。用的时候一定要再次搅拌,防止沉淀。
  • 6.盘子擦油,倒入薄薄一层粉浆,开水上笼蒸半分钟。
  • 7.肠粉半凝固放上拌好的虾仁,盖盖蒸1.5--2分钟。
  • 8.盘子拿出来,肠粉卷起来。
  • 9.装盘再浇上料汁即可享用。
