昨天去超市一时冲动买了很多茄子 今天早上起来看见茄子简直想捂脸哭 茄子这么吸油 我一顿得胖多少斤啊 想了一上午 终于决定做鱼香茄子 少油版的~ 超级好吃 瞬间光盘 分享给大家~

Details of ingredients

  • 紫皮茄子4根(长的)
  • 郫县豆瓣酱1勺
  • 剁椒1勺
  • 肉末20g
  • 适量(切细丝)
  • 尖椒适量(切细丝)
  • 胡萝卜适量(切细丝)
  • 香菜适量(切细丝)

Steps to make 鱼香茄子

  • 1.四根长茄子 要选这种的 做起来嫩嫩的
  • 2.先切成段 8.9厘米就可以
  • 3.切成这样 大概是1厘米宽的条
  • 4.放在蒸锅上蒸5.6分钟就可以啦 重点强调 这不是省油的关键
  • 5.这时已经蒸熟了的 茄子蒸没蒸熟是看不太出来的 用筷子扎一下 很轻松的扎透了就好是好了
  • 6.用盘子盛出来晾凉 同时把配菜切好 肉切丁或者切沫 胡萝卜、尖椒、香菜、藕都切粗一点的丝
  • 7.锅内热油 放入葱花爆香
  • 8.放入肉丁 划散 炒至变色 了)
  • 9.加入茄子 翻炒
  • 10.炒到这个程度 就可以啦 装回盘子里
  • 11.锅不用刷 直接再放一些油
  • 12.油热了以后就放入郫县豆瓣酱
  • 13.把郫县豆瓣酱 划散
  • 14.加入配菜 胡萝卜、尖椒、香菜、藕 (其实应该使用笋丝的 但是我不爱吃笋 特别喜欢吃藕 而且他们两个的口感很像 我就直接代替了)
  • 15.炒均匀 让配菜上都挂上酱
  • 16.酱已经很均匀的时候 加入一勺剁椒酱 这个我觉得是这道菜的灵魂 ~继续炒 让剁椒酱也能挂在上面
  • 17.翻炒均匀以后加入茄子 翻炒
  • 18.这个程度就可以了 把菜推到一边 油就会慢慢下来
  • 19.用慢慢下来的油炒两下香菜段 两秒就可以 然后和菜混合均匀就可以了
