葱油饼
在我们北方,喜欢吃面食,而做法简单、葱香浓郁,酥脆劲道的葱油饼,更是深受大家的爱戴。但葱油饼各家有各家的妙招。我这次做的葱油饼,专门用的是特意炸制的葱油,又有小香葱来加盟,这饼不好吃才怪呢!

Steps to make 葱油饼

  • 1.面粉中打入一个鸡蛋,加温水用筷子搅拌成絮状。用手将其揉成面团,没有干粉为止,静置饧发20分钟左右。
  • 2.锅子烧热,倒入足量的油,放入葱、姜、花椒,炸出香味,用滤网过滤掉葱姜渣。
  • 3.小碗内倒入炸香的油,放入适量的盐一茶匙、面粉(根据喜好添加其他调味品也可),搅拌均匀,能够自由流动为佳。
  • 4.将小香葱洗净,沥干水分,切末。
  • 5.将饧好的面团取出,揉成光滑的面团,将其擀成正方形的面片,用刷子将油酥均匀刷在面片上面。
  • 6.撒上香葱碎,将面片上下左右各切两刀,但千万别切断,共八刀。
  • 7.将面片反复折叠,整理成正方形,擀薄。
  • 8.平底锅烧热,倒入少许油,将饼放入,煎至两面金黄,即可。
  • 9.葱香浓郁
