今年刚好是丁酉鸡年,年夜饭怎么能少了“鸡”这道菜,太油腻的年夜菜已经不是很吃香了,小清新才是主角。所以我们今天换个做法:将鸡胸脯肉低温慢煮,撕成丝状,再调以自制的麻辣酱料,美味不可抵挡!

  • 陈醋(麻辣姜汁)2汤匙
  • 生抽(麻辣姜汁)2汤匙
  • 辣椒油(麻辣姜汁)1汤匙
  • 香油(麻辣姜汁)1茶匙
  • 白芝麻(麻辣姜汁)1茶匙
  • 花椒粉(麻辣姜汁)1茶匙
  • 食盐(麻辣姜汁)0.5茶匙

Steps to make 【四川】麻辣鸡丝

  • 1.将鸡胸脯肉清洗干净放入锅中,加入葱丝、姜片和料酒,再加入适量清水大火煮开;
  • 2.煮开之后调低火力,电磁炉火锅档800瓦的火煮15分钟,中途撇干净浮沫;
  • 3.煮好的鸡肉捞出,晾凉;
  • 4.用手顺着鸡胸脯肉的纹理撕成鸡丝;
  • 5.接着我们来调制麻辣酱料:陈醋2汤匙、海味生抽酱油2汤匙、辣椒油1汤匙、香油1茶匙、白芝麻1茶匙、花椒粉1茶匙、食盐0.5茶匙放入碗中,搅拌均匀;
  • 6.将调配好的麻辣酱料淋在鸡丝上,拌匀,撒上香菜即可。
