这个腌红肓蟹,是家乡人最喜欢吃的!
一般的腌螃蟹很多,常常吃的到,而这个腌肓蟹(母的梭子蟹),却是不常吃的到,因为没有老卤水,也做不出那个味道来,再者活的红肓蟹成本太高,所以也很少做。
朋友送了几只刚刚从海里捕来的红肓蟹,只只活的,非常新鲜,自己就学习做一次吧!

Steps to make 盐卤水腌肓蟹

  • 1.准备一只活的肓蟹
  • 2.用刷子刷洗干净,沥干
  • 3.锅里水开,放下姜,八角,桂皮,葱
  • 4.放5调羹盐,煮开2分钟,放些高度酒,成盐卤水
  • 5.把盐卤水倒入大碗,让其冷却
  • 6.取一大容器,放入肓蟹,倒入盐卤水
  • 7.盐卤水要淹过肓蟹,密封,放入冰箱
  • 8.7天以后拿出
  • 9.用凉开水浸去咸味
  • 10.颁开,去鳃,去胃
  • 11.斩块,装盆,上桌!
