炸虾球

Steps to make 炸虾球

  • 1.备冰鲜虾、馒头。
  • 2.温水洗净肥肉,洗净荸荠、葱姜,葱姜切末。
  • 3.馒头切成0.5厘米见方的小丁。
  • 4.冰鲜虾剥壳、去头尾,踢去虾线,洗净,放在案板上用刀压扁剁碎。荸荠去皮,切末。肥肉剁成馅。
  • 5.虾肉馅、肥肉馅、切成末的荸荠和葱姜共置一容器,调入料酒。
  • 6.放盐。
  • 7.放胡椒粉,沿同一方向搅拌上劲。
  • 8.手取适量肉馅,挤成丸子。
  • 9.放入馍丁中。
  • 10.丸子均匀滚上馒头丁。
  • 11.丸子周围都沾上小馍丁,用手轻轻捏一下,使其更牢固。
  • 12.裹好馒头丁的虾球。
  • 13.依次做好虾球。
  • 14.净锅放在火上,加入精炼油,烧至5成热时,用竹筷夹虾球,放入锅中炸制。
  • 15.炸制过程中用漏勺轻轻搅动。
  • 16.中火炸至色泽金黄,熟透时捞出。食用时可以蘸椒盐,也可以吃原味。
