  • 白糖1茶匙
  • 1茶匙
  • 味精1茶匙
  • 花椒粉少许
  • 鸡汤2汤匙

Steps to make 超级适合夏天吃的口水鸡!

  • 1.鸡腿洗净放入锅中,加入漫过鸡腿的冷水,放入姜片、葱段、黄酒大火煮滚,撇去浮沫,改成小火,火的程度使水面微微翻滚就可以了,这种方法出来的鸡肉非常的嫩,皮也不容易裂开。将鸡腿煮10分钟,然后关火焖15分钟,焖的过程中不要开锅盖。
  • 2.准备一盆冰水,越凉越好,将焖好的鸡腿放入冰水中冰镇,期间最好换一次冰水,直到鸡腿凉透。
  • 3.现在开始做红油。首先把花生米炒熟,放凉,去皮。然后将去皮花生米放入保鲜袋中,用擀面杖敲碎。
  • 4.切葱段、蒜末,准备好花椒,锅内倒入油烧至5、6成,放入葱段、花椒和部分蒜末,炒香,炒至油温8成时,关火,稍微放凉,滤出热油。
  • 5.将热油倒入盛放辣椒粉的碗中,稍微搅拌。滤出红油,红油中放入蒜末、生抽、醋、盐、味精、糖、香油、花椒粉和鸡汤,拌匀放凉。在鸡肉上撒上花生碎,把调好的红油淋到切好的鸡肉上,撒上葱末,开吃吧!
