果香糖醋排骨
45一斤的排骨,真的有点小贵,那就要好好做做吧,糖醋排骨是孩子们最爱吃的,也是我的最爱,我家节日餐桌更是必不可少,今天是小年孩子们回来了,我做了糖醋排骨,今天做的糖醋排骨加了酸梅,加入酸梅不仅可以增加酸度,还能增加香气,味道正宗,烧排骨的时候,香浓的排骨味、酸甜的糖醋味、加上果香味飘满了整个厨房,真的太香了,说沁人心脾一点都不为过,闻着都馋了,好想马上就吃到,一上桌这个菜没的最快了,大人小孩都喜欢吃,快过年了,都来试试做吧!

  • 酸梅100g
  • 精盐4g
  • 冰糖100g
  • 白砂糖80g
  • 陈醋80g
  • 胡椒粉少许
  • 料酒少许
  • 精盐(腌制)3g

Steps to make 果香糖醋排骨

  • 1.排骨用清水反复清洗几遍,洗干净血水控干。
  • 2.大葱切段,姜切片。
  • 3.准备酸梅和冰糖。
  • 4.排骨中加2克盐,葱和姜,少许料酒和胡椒粉用手抓拌,腌制十分钟。
  • 5.锅中加油,下入排骨煎炒,煎出多余的油脂,这样做出的排骨才会更香,先盛出。
  • 6.锅洗干净,加一手勺清水,下入冰糖开始熬糖色,中火把冰糖溶化,先是这样的大泡泡,要用手勺不停的搅拌。
  • 7.再熬是这种小泡泡,改小火。
  • 8.最后变成没有泡泡,糖色变成这种枣红色可以了。
  • 9.下入陈醋,用勺子不断的搅拌,小火多熬一会,上色才好看。
  • 10.下入排骨。
  • 11.下入葱姜和酸梅炒均匀,挂上糖色。
  • 12.加入清水,水量没过排骨就可以了,盖好炖煮十分钟。
  • 13.十分钟拣出葱姜。
  • 14.加入80克白砂糖和4克精盐来增加醇厚度,继续炖煮十分钟。
  • 15.最后收汁时加入少许陈醋翻拌均匀,再闷三分钟,收汁时要看住别糊了,色泽金红,浓香四溢,酸甜可口,果味飘香的糖醋排骨就完成了。
