椰蓉牛奶小方
这道小点心软嫩香甜,做法也简单,不算晾凉冷藏的时间,10分钟就能做好,用它来招待朋友或勾引小朋友,应该是省心省力又有面子。说到勾引小朋友,我还真有一次失手。侄女家的小千金,竟然不喜欢这个点心,倒是我家那个大学在读的“小朋友”很爱吃。
  牛奶小方不但做法简单,材料也是家中常见的:牛奶、玉米淀粉及盐、糖足矣。如果想要更多奶香味,可以加点淡奶油。我这款牛奶小方外面包裹满满的椰蓉,香味十足;如果没有椰蓉,粘裹糖粉、抹茶粉、可可粉等等都是可以的。
  牛奶小方主要依靠淀粉的加热糊化及凝结作用,可以说任何可食用液体都能做出“小方”来,我以前发过一篇《草莓小方》就是用草莓汁来代替牛奶做的。

Steps to make 椰蓉牛奶小方

  • 1.准备好所有食材,同时准备好模具,模具中垫好保鲜膜以方便脱模。
  • 2.倒约30~40克牛奶到淀粉碗中,调成水淀粉。
  • 3.剩下的牛奶、盐、糖、淡奶油全部倒入奶锅,小火加热并搅拌到糖溶化。
  • 4.水淀粉会沉淀,再搅拌一下倒入牛奶混合液中,快速不停搅拌以免糊锅,牛奶液会变粘稠,如图状态。PS:我的锅是已不太灵光的旧不沾锅。
  • 5.牛奶糊倒入模具,用刮刀稍稍整理一下形状——主要是弄平表面,用保鲜膜贴住牛奶糊表面盖好,冷却后冷藏1小时以上。
  • 6.脱模后用刀切成合适大小的块状,我的约3cm见方。
  • 7.碗中倒些椰蓉,把牛奶块放入滚几滚,沾满椰蓉。
  • 8.完工啦!软嫩香甜,入口即化哦!
