西北特色面食——酸汤窝窝面
要说起这窝窝面,真的是非西北莫属了。窝窝面的做法比较有讲究,一般和面的时候都要加入鸡蛋,至于用来烩面的菜的话,可根据实际情况决定,可以吃得非常考究,也可以用手边现有的菜来做,繁简悉听尊便。

有人做窝窝面的时候喜欢把面丁揉圆,但我更喜欢它保持原来棱角分明的样子,就像生活中的我们,在经历过诸多生活的磨砺和考验后,仍然能保持自己独有的棱角是多么地难能可贵啊!

据说真正的窝窝面配料极其讲究,其中有磨菇、核桃仁、木耳、蛋片、肉米,并配以多种调料,细数下来,已超过十多种。
今天,我来做一道特别家常的酸汤窝窝面,配以咱老陕一日三餐都离不开的油泼辣子,酸辣开胃,鲜香无比!

  • 玉米面粉少量
  • 土豆1个
  • 胡萝卜1根
  • 鸡蛋1枚
  • 小葱1根
  • 生姜1块

Steps to make 西北特色面食——酸汤窝窝面

  • 1.先来制作窝窝面。一个半鸡蛋磕入面粉中搅拌均匀,缓慢倒入温水和成软硬适中的面团,加湿布饧15分钟后揉揣一次。
  • 2.再饧15分钟后拿出擀成厚约0.5厘米的面片。
  • 3.面片上撒一层玉米面粉,分别模、竖向切成约0.5*0.5厘米的方丁。
  • 4.用圆头筷子分别在每一个方丁中心位置扎一个圆孔,呈窝窝形状。
  • 5.再撒一些玉米面粉,把窝窝面抖散开来。窝窝面就做好了。
  • 6.锅中水烧开后下入窝窝面煮熟,捞出备用。
  • 7.在煮面的同时把土豆去皮切丁,胡萝卜切丁,葱和姜切碎备用。
  • 8.剩余半个鸡蛋入锅中摊成蛋皮。
  • 9.蛋皮切成小方丁。
  • 10.炒锅放油,油热后炝葱和姜,再倒入土豆丁和胡萝卜丁翻炒,加适量五香粉和少量老抽。
  • 11.加适量清水,加锅盖,焖熟土豆和胡萝卜丁。
  • 12.加食盐,汤汁收干后铲出备用。
  • 13.另起锅,锅中放少许油,油热后倒入香醋,激出醋香味来,但要小心不要被烫伤。
  • 14.加一大碗水烧开。
  • 15.加入之前煮好的窝窝面和炒好的烩菜,加少量盐调味,入味后即可关火。
  • 16.出锅装于碗中,在上面撒上蛋皮丁和葱花。
  • 17.再来一些油泼辣子,唉呀,嘹扎咧!
