北海道吐司(中种法)

Details of ingredients

  • 高筋粉300g
  • 细砂糖9g
  • 速溶酵母2g
  • 牛奶96g
  • 动物性鲜奶油84g
  • 蛋白21g
  • 黄油6g
  • 蛋白24g
  • 细砂糖45g
  • 4g
  • 速溶酵母2g
  • 黄油6g(两种面团混合后再放入)

Steps to make 北海道吐司(中种法)

  • 1.将所有中种材料放入容器中
  • 2.揉成面团即可
  • 3.盖上保鲜膜,进行第一次发酵约2—2.5倍大
  • 4.把发酵好的中种面团撕成小块和所有主面团材料混合
  • 5.用面包机搅成稍具光滑状,加入黄油6克
  • 6.搅拌成能拉出大片透明的薄膜(手套膜),延续发酵约10分钟
  • 7.分割成12等份,滚圆松弛15分钟
  • 8.取一面团用手压一下,拿擀面杖擀成椭圆形
  • 9.第一次擀卷从面团的中心点分别从上、下擀成椭圆状,翻面,从上往下卷起,不要超过3圈,松弛10分钟
  • 10.第二次擀卷成长方形,翻面从上往下卷起,不要超过3圈
  • 11.均匀的放入吐司模,每个小吐司模放6个,盖上保鲜膜进行最后发酵
  • 12.发酵至模具的8分满,均匀的刷上蛋液,放入预热好的烤箱,上下火180度,中下层,烤约35分钟,出炉即刻脱模
