香辣牛肉酱是一款适合懒人的美味辣酱,可以拌面,可以炒饭,甚至夹个馍,或者用它炖个豆腐,都是完美的搭配,而且此酱密封冷藏可以保存一周左右,是懒人的不二之选。

Steps to make #信任之美#【香辣牛肉酱】

  • 1.牛里脊清洗过后厨房纸巾擦干水分,切成丁(不要切太小待会炒的时候会缩水)。
  • 2.放入姜末、2小勺盐、4大勺料酒、1大勺白酒搅拌均匀腌制半小时。
  • 3.将干红辣椒擦干净后用剪子剪成小段。
  • 4.炒锅放入多多的植物油烧热后下入牛肉丁中火煸炒。
  • 5.煸炒一会牛肉的水分会蒸发一部分,牛肉感觉变少,油变得非常浑浊。
  • 6.继续煸炒直至牛肉变干颜色变深,油变得清亮,这个过程大约半小时。
  • 7.这时候转小火加入2小勺五香粉、3小勺花椒粉再煸炒几下。
  • 8.然后加入刚刚剪成小段的干红辣椒、3大勺辣椒碎。
  • 9.煸炒2分钟的样子至辣椒辣味逼出。
  • 10.加入熟的花生米(我用的酒鬼花生)煸炒均匀。
  • 11.加入150克甜面酱、150克豆瓣酱继续小火煸炒几分钟(约5~6分钟)至酱熟透。
  • 12.撒上熟的白芝麻晾凉装瓶子或带盖子的盒子里,放冰箱冷藏保存。
