双色戚风

  • 玉米油23g
  • 白砂糖40g
  • 白醋几滴
  • 可可粉1咖啡勺

Steps to make 双色戚风

  • 1.鸡蛋分离,蛋黄里加入玉米油和牛奶混合。
  • 2.混合搅拌均匀至乳化。
  • 3.筛入低粉,快速轻柔搅拌均匀备用。
  • 4.蛋清里加入几滴白醋,加入三分之一白糖,用打蛋器中低速搅打蛋白。
  • 5.搅打至大泡时加入第二份白糖,继续搅打。
  • 6.搅打至出现粗纹路时放入最后的白糖。
  • 7.直到蛋白出现小直角状态即可。
  • 8.可可粉用少许蛋黄糊调开,加入少许蛋白,混合均匀备用。
  • 9.用翻拌法,把剩下的蛋白和蛋黄混合。
  • 10.两种颜色的蛋糕糊就做好了。
  • 11.一层可可糊一层原味糊,分次倒入模具,轻震出气泡,烤箱预热150℃,中层,烤50分钟左右。
  • 12.烤好后立刻取出倒扣冷却,常温后脱模切块。
