  • 1.鸡蛋 糖 水饴 混合 用手动打蛋器搅打几下搅匀将盆放入锅中隔水加热,至锅中水温略烫,约40度左右,取出。
  • 2.将牛奶 黄油 入小锅,放入大锅中隔水加热至黄油融化。
  • 3.全蛋高速打发,至大气泡消失,蛋液成细腻状态,再转低速继续打发1分钟,至提起打蛋头,蛋液滴落不消失。
  • 4.分两次筛入蛋糕粉,用切和铲的方法拌匀。将锅中温热的牛奶黄油液分两次倒在刮刀上面,经刮刀流到面糊内,拌匀。
  • 5.用冰激凌勺舀起面糊,分到各小纸杯内,举起连模,震两个,去气泡。量为12-13个,在我分完12个后,还留了一点,另用了一个小纸模烤。
  • 6.烤箱180度,中层18分钟。表面金黄,取出,脱模晾凉。
