又到了菠萝飘香的季节!做一道带有果香的菠萝咕噜肉吧!咕噜肉又叫古老肉,是一道广东名菜!

  • 番茄酱3匙
  • 3匙
  • 白醋1匙
  • 1/4匙
  • 鸡精少许
  • 胡椒粉少许
  • 500克

Steps to make 菠萝咕噜肉

  • 1.菠萝切块,用淡盐水泡一下。
  • 2.青、红椒分别切菱形片。
  • 3.里脊肉切厚片,在一面轻轻切上十字花刀,不用切太深。像切鱿鱼花一样。这一步是为了肉块炸时软嫩,不硬。
  • 4.把肉片切成粗条状,再切成均匀小块,和菠萝块大小一致。
  • 5.肉块加盐、料酒、胡椒粉、鸡精略腌15分钟。
  • 6.腌好肉里加入一个鸡蛋、适量淀粉搅成粘稠状。挂好面糊。
  • 7.锅中倒入500克油,烧至5、6成热时下入肉块炸熟,注意油温,不要炸硬了!
  • 8.蒜切末备用。
  • 9.调碗汁。3匙番茄酱、3匙糖、1匙白醋、1/4匙盐、少许鸡精、胡椒粉、调成碗汁备用。这道菜味汁配比是3糖1醋,因为有菠萝,所以减少醋的用量。大家可以随自己喜好调整。
  • 10.锅中余油,下入青、红椒翻炒几下出锅。盛出备用。
  • 11.锅中加少许油,下入蒜末爆香。
  • 12.加碗汁、少许水炒至稍见粘稠。
  • 13.下入肉块、菠萝块、青、红椒翻炒均匀。
  • 14.成品。酸甜可口。
