  • 猪里脊丝150克
  • 鸡蛋清1个
  • 豆腐皮100克
  • 葱丝80克
  • 黄酒10克
  • 味精1克
  • 精盐2克
  • 水淀粉20克
  • 花生油20克
  • 甜面酱一袋125克
  • 白糖两勺
  • 香油两勺
  • 姜汁20克

Steps to make 京韵京味儿《京酱肉丝》

  • 1.甜面酱里放入白糖、味精、香油拌匀
  • 2.豆腐皮用刀切成长方形
  • 3.把豆腐皮和甜面酱上笼旺火蒸10分钟。
  • 4.把姜先切碎,然后捣成蓉加少许清水做成姜汁
  • 5.肉丝里放少许盐、胡椒粉、黄酒和一个蛋清用手抓匀,然后再放少许水淀粉抓匀,此法便是上浆,浆制10分钟备用
  • 6.把大葱白切丝铺在盘里,把蒸好的豆皮分四份摆放到盘子的四角
  • 7.炒勺上火烧热,注入少许油下入浆制好的肉丝滑熟,肉丝稍有变色即可捞出
  • 8.炒勺中下入蒸好的甜面酱,倒入适量姜汁炒匀
  • 9.酱汁里再烹入黄酒炒匀
  • 10.当酱汁炒至冒泡时倒入滑好的肉丝,用旺火快速翻炒均匀,收汁便可出锅
  • 11.把炒熟的京酱肉丝,倒入事先铺好葱丝的盘中,便可上桌食用,食用时可用豆皮卷着吃,此菜制作全部完成
