苏北风味--------辣萝卜烧肉
在苏北这里,这种小白萝卜被称为辣萝卜,或者水辣萝卜。一般用来烧肉,凉拌萝卜丝,或者制作萝卜干。
       那种长长的青萝卜,被称为青头萝卜,一般用来做过年的包子馅,或者过年时候的肉圆馅。
        家家户户都会在自留的一块地里,长上一池萝卜,随吃随拔。估计现在这个时节,萝卜才刚刚长,只有筷子那么细吧。

        俗话说,冬吃萝卜夏吃姜,有病不用开药方。说的就是,冬天吃萝卜的好处。很多东西,应着时节吃,对身体是非常有好处的。
虽然现在不是冬天,但是萝卜却已经上市了。趁着新鲜,买些来尝尝。
按照苏北的风味来做的一道菜,几乎在冬天苏北人家的餐桌上,只要自家长萝卜的,估计10家有5家会做这道菜吧。

Steps to make 苏北风味--------辣萝卜烧肉

  • 1.所有食材准备好。
  • 2.白萝卜和胡萝卜洗净,切成滚刀块。
  • 3.猪肉洗净,切成小块。
  • 4.切好的猪肉放生抽,老抽,麻油,料酒,淀粉抓匀腌制20分钟。
  • 5.炒锅加热,倒入适量的食用油,放葱姜爆香。
  • 6.倒入腌制好的猪肉下锅快速翻炒。
  • 7.大约翻炒2分钟,猪肉变白发硬。
  • 8.倒入白萝卜块翻炒片刻,并加入适量的盐。
  • 9.倒入半碗水(水不要多,不能没过食材,因为萝卜里含有一些水分的。)盖上盖子焖煮5分钟。
  • 10.萝卜变软,快收汤时,倒入胡萝卜翻炒。
  • 11.胡萝卜变软后,加入一勺白糖,拌匀后,即可关火装盘。
