椰蓉蔓越莓月饼
这是一款我很喜欢的月饼,浓浓的椰香,加上酸甜的蔓越莓,好吃又不腻!

Details of ingredients

  • 中筋面粉200克
  • 转化糖浆140克
  • 花生油30克
  • 枧水4克
  • 黄油140克
  • 牛奶80克
  • 白糖140克
  • 鸡蛋2个
  • 椰蓉260克
  • 熟糯米粉80克
  • 蔓越莓100克
  • 蛋黄1个
  • 蛋清1大勺

Steps to make 椰蓉蔓越莓月饼

  • 1.将黄油和牛奶、白糖混合,放入微波炉加热至黄油融化,搅拌均匀。
  • 2.加入椰蓉,搅拌均匀。
  • 3.加入鸡蛋,搅拌均匀。
  • 4.加入熟糯米粉,搅拌均匀。
  • 5.加入切碎的蔓越莓,混合均匀,放冰箱冷藏半小时以上。
  • 6.将转化糖浆和花生油以及枧水混合,用蛋抽搅拌均匀。
  • 7.筛入面粉。
  • 8.揉成团。
  • 9.将饼皮平均分成25份,每份大约15克,搓圆。
  • 10.将馅料平均分成25份,每个大约35克,搓圆。
  • 11.取一份饼皮,放入左手掌心,用右手的三个手指轻柔的按压面团,压成小圆饼状,.放入一个馅。
  • 12.用手的虎口位置,把饼皮的四周向上推,边推边收口,包好,滚圆。
  • 13.全部包好,盖保鲜膜保湿,将每个饼坯滚少许面粉,用月饼模具印出自己喜爱的图案。
  • 14.摆入烤盘,在月饼表面喷水。
  • 15.风炉180度预热好进炉,温度调至150度,烘烤5分钟后出炉,刷蛋液,继续烤至表面上色均匀。
  • 16.立即出炉冷却。
