前段时间看到佳妮宝贝做的【双节同庆】节日餐桌热菜——甜皮烤鸭,很受诱惑,决定照着做做,味道果然很不错,大家都来试试吧!

Steps to make 甜皮烤鸭

  • 1.姜葱蒜切片或段备用。
  • 2.鸭子表面均匀的抹上一层细盐。
  • 3.将李锦记蒸鱼豉油(宝贝用的是李锦记卤水汁,我家没有,就用豉油代替了,呵呵)和酱油按1:1的比例倒入一个盆中,用量根据鸭子的大小决定,放入姜葱蒜。
  • 4.鸭子表面抹上一层红糖。
  • 5.泡入第3步调制好的腌料中,放冰箱冷藏过夜。
  • 6.麦芽糖中加入一点点水将糖化开。
  • 7.如果不好溶化可以隔水加热。
  • 8.从冰箱中取出鸭子(我家就两个人吃饭所以我将鸭子又切半,剩下的冻冰箱下次再吃!),在表面刷上一层麦芽糖水,放在通风处,每隔半小时再刷一次,共刷4次。
  • 9.烤箱预热220℃,将鸭子插在烤架上旋转烤制,每隔10分钟补刷一次麦芽糖水,共烤50-60分钟即可。
