自制美味牛肉干
1、1公斤牛肉最後做出來大概只有1/3份量的牛肉乾,而製作牛肉乾最好選用無筋的瘦牛肉,2、牛肉煮出血水后撈出浸入涼水可以使牛肉的肉質變得緊縮,而加上香料一起煮制可使牛肉口感更佳,3、最後炒制牛肉的過程一直使用小火,炒糖色的時候注意不要炒太焦就行了。

  • 花椒粉20克
  • 白糖30克
  • 老抽2匙
  • 2茶匙
  • 味精少许
  • 熟白芝麻1汤匙
  • 陈皮1块
  • 肉蔻1粒
  • 丁香4粒
  • 草果1粒
  • 香叶2片
  • 桂皮1块
  • 小茴香少许
  • 八角2粒
  • 花椒1小把

  • 1.准备好所有主料和辅料
  • 2.沸水中煮出血沫
  • 3.捞出放凉水
  • 4.另起一锅,放香料煮沸
  • 5.放入牛肉,小火煮一小时
  • 6.捞出,沥干水分,放凉
  • 7.牛肉切成小手指大小条
  • 8.炒锅内放较多油,放入白糖
  • 9.炒出糖色,糖要炒化,成焦黄色,放入牛肉条炒
  • 10.放入老抽炒
  • 11.放入辣椒粉和花椒粉
  • 12.最后放入熟白芝麻和少许味精,翻炒即可!
