炸酱面
记得上学时,很喜欢和同学一起去面馆吃炸酱面,但因为离学校比较远,所以去的次数并不多,可能正因为不是很容易吃到,所以更让人觉得美味吧!以后有机会,一定要再回兰州,把记忆中的美味全吃一遍!

  • 肉末500克(半肥瘦)
  • 甜面酱两汤匙
  • 清水150毫升
  • 京葱1根
  • 老抽1勺
  • 绿豆芽200克
  • 青笋尖1根
  • 胡萝卜半根
  • 豆腐皮两片

Steps to make 炸酱面

  • 1.把老抽和甜面酱倒入一个大碗内,然后加入150毫升清水用筷子慢慢调匀;京葱切成碎末备用。
  • 2.将肉清洗干净。
  • 3.将肉剁成肉末,个人认为不要剁的太碎,能吃到颗粒状的肉肉口感最好,当然各位可以依自己的口味来决定。
  • 4.将豆腐皮切成丝,不要太细,太细了会碎的。
  • 5.将青笋尖和胡萝卜切细丝,胡萝卜忘记拍照了,而且切好丝的也没拍,只好用原料代替了。
  • 6.炒锅内倒入比炒菜更多的油烧热,油热后放入京葱末翻炒半分钟,倒入肉末一起翻炒至变色脱生,然后倒入调匀的酱料用最小火慢慢翻炒7、8分钟即可。
  • 7.把切好的青笋丝、胡萝卜丝、豆腐皮丝和洗净的绿豆芽放入沸水中焯烫一下捞出,大蒜剁成蒜末备用。
  • 8.把烫过菜码的水烧开后放入面条煮熟,然后捞出面条过冷开水,沥水盛入碗内,最后把菜码倒在面条上。
  • 9.最后倒入适量炒好的炸酱,再倒少许醋拌匀即可。
