玫瑰云腿月饼馅
第一次对月饼季没什么想法。这一年,各种事情忙活,竟不觉月饼节已在眼前。待到恍然惊觉,距离中秋竟然已经没有几天了。月饼,总该还是要做的吧?小盆友大概正在心里暗暗期待着呢。。。。
猛然间想起还有那么一小块火腿,正好可以来个云腿月饼。就按照往日的方法做云腿馅儿先。不过,今年还是略有不同。在云腿馅里加入玫瑰酱,让云腿月饼也带上玫瑰的香味, 顺便还能消耗一些玫瑰酱。
曾经有一年,用云腿月饼的皮,鲜花玫瑰饼的馅,做过一次玫瑰馅的滇式月饼。但效果并不太理想,多油的饼皮配上单纯甜味的馅儿,似乎多少让人感觉有些甜腻。这一次,把两种月饼的馅组合在一起,让甜咸适口的火腿馅儿中带上玫瑰花的香气,应该会是个不错的结果。
做好的馅需要放置几天,让糖盐互渗透,一口下去甜中有咸,咸中有甜,才能达到最佳口感。

  • 熟面粉20克
  • 火腿肉130克
  • 白糖100克
  • 蜂蜜15克

Steps to make 玫瑰云腿月饼馅

  • 1.用料:玫瑰酱(取花瓣)50克,熟面粉20克,火腿肉130克,白糖100克,蜂蜜15克。
  • 2.火腿洗净,切成厚片。
  • 3.放入沸水锅中,蒸约15-20分钟左右。
  • 4.熟透,熄火,晾凉。
  • 5.倒去蒸水,去皮。
  • 6.切成碎丁,备用。
  • 7.将火腿丁,熟面粉,白糖,倒入大碗,混合均匀。
  • 8.加入玫瑰酱,蜂蜜。
  • 9.拌匀,密封,存放数日之后再使用。
