Steps to make 宫保鸡丁

  • 1.食材:鸡腿、花生等。
  • 2.辣椒面放锅里,另起锅,烧油七成热,取一半一勺一勺浇在辣椒面上,边浇边搅拌。
  • 3.留一半热油凉至五成热,浇在辣椒面上。加紫草,搅拌均匀,小火慢熬10分钟,关火,过夜即可。
  • 4.花生倒入开水里,泡发后捞出,去皮。
  • 5.起油锅,小火炒到微微黄,盛出。
  • 6.鸡腿去骨、切丁,放入加饭酒、盐、蛋清拌匀,加淀粉,拌匀。
  • 7.制作料汁:放入加饭酒、盐、糖、白醋、酱油、淀粉,拌匀即可。
  • 8.取适量过夜红油,小火加热后,放入花椒和辣椒,炒到棕红色。
  • 9.下鸡丁,转大火,略炒。立刻放入姜片、蒜,炒半分钟,淋入料汁,快速翻炒。
  • 10.放葱段、花生,翻炒至酱汁完全包裹。
  • 11.放少许花椒油,翻炒即可。
  • 12.盛出,开饭!
