醇浓豆浆吐司
自磨豆浆,清淡玉米油,少糖,无蛋,非常清爽,适合夏天的百搭吐司

  • 高筋面粉270g
  • 豆浆180ml(加减)
  • 酵母粉3g
  • 3g
  • 细砂糖20g
  • 玉米油30ml

Steps to make 醇浓豆浆吐司

  • 1.将面粉、盐、糖、酵母一起放进搅拌缸,混合均匀。
  • 2.加入豆浆,不要一次全部加入,留一部分调整面团硬度。
  • 3.搅拌成絮状,静置10分钟左右。
  • 4.开始打面团,打到扩展阶段。
  • 5.分次加入玉米油,每次都要等面团完全吸收后再加下一次。
  • 6.打到完全扩展。
  • 7.滚圆进行基础发酵。
  • 8.发酵到2到2.5倍大,戳一个小洞,不会回缩,面团也不塌陷,刚刚好。
  • 9.排气后分成三份,滚圆,松弛15分钟。
  • 10.擀卷。
  • 11.入模。
  • 12.最后发酵到8分满,盖上吐司盒盖。
  • 13.170度,烘烤35分钟左右,烤好后立即脱模,在网架上冷却。
