Steps to make 百叶结烧肉

  • 1.五花肉切麻将块。
  • 2.干豆腐打结成百叶结、姜切片。
  • 3.生抽和老抽,比例1.5:1。
  • 4.冰糖用搅拌机磨成粉,白糖亦可,使用冰糖颜色会比较亮。
  • 5.炒锅中放少量油,放入五花肉块和姜片,小火煎。
  • 6.煎至肉块表面微微焦黄,放入冰糖粉,拌炒至糖粉融化。
  • 7.倒入生抽和老抽,炒至上色。
  • 8.倒入适量热水,没过五花肉,大火烧开。
  • 9.转中火煮10分,加入百叶结,烧开后转小火炖煮。
  • 10.煮至肉块软烂后,转大火收汤后即可出锅。
