黑麦陈皮豆沙月饼
在经典的广式月饼上加了黑全麦粉,做了一点小小的改变。馅料用的是自己炒的陈皮红豆沙馅,一点也不甜腻,味道棒棒哒。黑麦、陈皮,两者加起来,似乎挺健康的感觉。

  • 黑全麦粉10g
  • 转化糖浆70g
  • 花生油30g
  • 枧水2g
  • 陈皮红豆沙馅455g

Steps to make 黑麦陈皮豆沙月饼

  • 1.将糖浆、花生油、枧水用手动打蛋器搅匀。
  • 2.加入中筋面粉和黑全麦粉,用刮刀翻拌均匀,直到看不见干粉即可。
  • 3.将面团包上保鲜膜,松弛2个小时。
  • 4.松弛好的饼皮分割成15g一个,滚圆备用。
  • 5.陈皮红豆沙馅分成35g一个。
  • 6.取出一个月饼皮剂子,包入一颗馅料,最后收口要收紧,并将其滚圆。
  • 7.将月饼全部包好,用模具印出花型。(压月饼之前可以开始预热烤箱,上下火200℃)。
  • 8.将全部印好的月饼连带烤盘,送入预热好的烤箱,上下火190℃,中层,烘烤5分钟,让月饼花纹定型。
  • 9..取出月饼,表面薄薄刷上一层蛋黄液,继续送入烤箱,上火170℃,下火160℃,中层,烘烤13分钟。
  • 10.做好的月饼晾凉之后密封起来,隔天回油之后才可以吃哦!
