黑芝麻广式月饼
刘先生说没有蛋黄的月饼是没有灵魂的。而他最爱的就是这款黑芝麻蛋黄广式月饼。低糖的黑芝麻馅,不甜腻,很香,确实让人念念不忘。

  • 转化糖浆115g
  • 花生油50g
  • 枧水4g
  • 低糖黑芝麻馅480g
  • 咸鸭蛋黄12个

Steps to make 黑芝麻广式月饼

  • 1.冷冻的咸鸭蛋黄解冻后,提前一个晚上用食用油浸泡。
  • 2.第二天取出咸鸭蛋黄,烤箱180℃,烘烤5分钟左右,只要看到蛋黄冒油就可以拿出来。
  • 3.接着来处理月饼皮。将糖浆、花生油、枧水用手动打蛋器搅匀。
  • 4.加入面粉,用刮刀翻拌均匀,直到看不见干粉即可。
  • 5.将面团包上保鲜膜,松弛2个小时。
  • 6.松弛好的饼皮分割成23g一个,滚圆备用。
  • 7.黑芝麻馅分成40g一个,包入咸鸭蛋黄。
  • 8..接着用饼皮包入內馅,滚圆备用。
  • 9..取出学厨月饼模(75g HelloKitty款),卡入花片。在花片和模具周围刷一层薄薄的油。将月饼面团放入月饼模中,移到烤盘上,印出花纹。(压月饼时可以开始预热烤箱,上下火200℃).
  • 10.将全部印好的月饼连带烤盘,送入预热好的东菱烤箱,上下火190℃,中层,烘烤5分钟,让月饼花纹定型。
  • 11..取出月饼,表面薄薄刷上一层蛋黄液,继续送入烤箱,上火170℃,下火160℃中层,烘烤15分钟。
  • 12..做好的月饼晾凉之后密封起来。
  • 13.隔天回油之后才可以吃哦!
