    Steps to make 梅菜蒸扣肉

    • 1.将梅菜叶一片片撕开浸泡,再用清水反复冲洗干净,切小段备用。
    • 2.将五花肉放入锅里煮至7成熟(以筷子可以扎穿为宜)。
    • 3.取出沥干水份后将肉皮表面刮干净,再用牙签在上面扎孔(扎的越密越好)。
    • 4.先抹上盐,再刷上一层麦芽糖水(也可以用蜂蜜水)。
    • 5.将肉皮向下放入油锅里炸至表皮金黄。
    • 6.捞出沥油后放入冰水里浸泡4-6小时。
    • 7.将五花肉泡至肉皮起皱后捞起沥干水份后切片。
    • 8.肉皮向下码入碗内,将梅菜放在上面。
    • 9.用生抽、老抽、蚝油、白糖调一碗汁。
    • 10.将汁淋入碗里放入电压力锅里蒸至熟烂。
    • 11.取出倒扣即可。
