  • 豌豆苗200克
  • 金针菇150克
  • 半个
  • 蛋清半个
  • 蒜瓣一个量
  • 干辣椒几个
  • 辣椒酱2勺
  • 花椒一勺
  • 八角2个
  • 料酒2勺
  • 胡椒粉少许
  • 鸡精少许

Steps to make 家庭版水煮鱼

  • 1.准备食材
  • 2.将黑鱼从背骨分割,片下鱼肉,黑鱼比较滑我撒了一把面粉操作变得方便很多
  • 3.将鱼骨切段,鱼肉片成薄片
  • 4.片好的鱼片和鱼骨分别用清水洗去血水,鱼片变得清白
  • 5.鱼片用姜片,料酒,盐,胡椒粉,蛋清生粉腌15分钟
  • 6.锅中做水,加少许油和盐,金针菇切段,水开后下入煮熟
  • 7.同样将豌豆苗焯水
  • 8.取砂锅,将金针菇和豌豆苗铺入锅底
  • 9.锅中放油,比平时炒菜的油量多一些,下入花椒八角干辣椒,小火熬出香味
  • 10.放入蒜瓣片,放入辣椒酱,轻轻翻炒后倒出一半油备用
  • 11.锅中剩余的油加入姜片煸炒鱼骨
  • 12.加料酒和适量水大火煮开,小火熬制10分钟放入适量盐
  • 13.改大火后,鱼汤滚开时放入鱼片,用筷子拨开
  • 14.入鸡精,盛入砂锅,表面浇上热油即可
