锅包肉
在家学做了一道东北菜——锅包肉!这是我家小吃货开出的菜单!锅包肉是一道东北风味菜,满族美食。 就是将猪里脊肉切片腌入味,裹上炸浆下锅炸至金黄色捞起,再下锅拌炒勾芡即成。成菜色泽金黄,口味酸甜。从小到大,我家女儿对酸甜味的菜肴那是情有独钟!

  • 里脊肉250克
  • 胡萝卜少许
  • 姜丝少许
  • 大葱丝少许
  • 料酒2勺
  • 少许
  • 白胡椒粉少许
  • 土豆淀粉100克
  • 米醋30克
  • 砂糖30克
  • 薄盐少许
  • 生抽少许
  • 柠檬汁少许

Steps to make 锅包肉

  • 1.里脊肉切成5厘米宽、0.2厘米厚的肉片
  • 2.放入碗里加点料酒、盐和白胡椒粉腌制15分钟
  • 3.把土豆淀粉放入碗里,加入适量清水调匀后静置30分钟
  • 4.30分钟后,土豆淀粉沉淀后把表面的水倒掉
  • 5.把湿的淀粉倒入肉片中抓匀
  • 6.准备好胡萝卜丝、葱丝和姜丝
  • 7.准备好糖醋汁:1:1的砂糖和米醋,稍微加点生抽和料酒混合均匀
  • 8.起油锅,等油温升至六成热后,一片一片放入肉片
  • 9.炸至金黄色捞出,分批全部炸好后
  • 10.把油锅加热至八成热后,把肉片复炸至外表发脆
  • 11.捞出沥干油分
  • 12.另起油锅爆香姜丝
  • 13.再放入胡萝卜丝和葱丝炒匀
  • 14.倒入之前调好的糖醋汁
  • 15.加点新鲜的柠檬汁煮至发稠
  • 16.把炸好的肉片倒入,快速炒匀,可以撒点香菜叶
  • 17.出锅装盘
