新年香飘飘烤鸭
一直都很想学做烤鸭,喜欢吃皮脆脆的~于是在做之前Google了很多烤鸭的方法,看得头都晕咧~好像如果要做脆皮的话是要吹气泡的~晕倒!
最后还是靠自己DIY,烤了一个还不错的香喷喷的烤鸭~~

Steps to make 新年香飘飘烤鸭

  • 1.冷冻鸭子一只,解冻后洗净整理好切开肚皮趴在切菜板上~让我想起‘趴鸭’~ :)
  • 2.全身抹上椒盐~给鸭子按摩几分钟,使椒盐完全渗透到皮肤~
  • 3.把除蜂蜜以外的调料加些水拌在一起,再给鸭子来个淋浴,让鸭子趴在‘大浴缸’里~保鲜膜封起来放冰箱过夜.
  • 4.第二天起来把腌鸭子的汁倒进碗里备用。锅里烧一锅滚烫的水,拎住鸭翅膀,滚水往鸭子身上淋几遍,淋的时候会看到鸭皮紧缩,还会呱呱大叫!!
  • 5.用蜂蜜、酒加点水拌匀,等鸭子沥干水趁热的时候在皮上刷一层蜂蜜水,放通风处风干.
  • 6.1~2小时风干后再刷上蜂蜜水,碗里剩一些蜂蜜水备用,继续风干约三个小时。
  • 7.烤盘铺上锡纸,土豆和洋葱切片后铺上。
  • 8.摆上鸭子~
  • 9.在鸭子骨头露出来的地方用锡纸裹起来,避免烤焦。
  • 10.烤箱预热5分钟,再将温度调至200度,淋上之前腌鸭子的酱汁,烤的过程中要注意观察,中间要给鸭子不停地翻身。皮上烤焦的地方再用锡纸盖起来。
  • 11.鸭子烤得差不多的时候再刷上剩下的蜂蜜水,调到风扇档继续吹十几分钟,香喷喷的烤鸭就新鲜出炉了~
  • 12.鸭子砍一半,看起来有点焦,但吃起来并没有焦味,很香~
  • 13.两个人把半只鸭子吃光光咯~还有垫在底下的土豆片特好吃!所有味道都渗进去了,再加上洋葱的香味~~~~回味无穷~~
