腐乳红烧肉
香而不腻的红烧肉!

Steps to make 腐乳红烧肉

  • 1.五花肉切成块,用少许盐腌制10分钟后,放入沸水中焯一分钟,捞出备用。
  • 2.取红油腐乳2大块(块小的用3块,我用的是“王致和”的大块腐乳),和着适量腐乳汁,捣碎备用。
  • 3.取一小把冰糖,锅中少量油,放入冰糖,小火熬制(当心油溅起被烫伤)。
  • 4.熬出糖色后,放入焯好的五花肉爆炒,一直爆到肉的表面有点焦黄。
  • 5.放入备好的腐乳汁,再倒入少量料酒和酱油(也可不放),翻炒均匀后,加水没过肉,再加一小碗水(大概250ml),大火烧开水后转小火焖制至少一小时。
  • 6.汤汁浓稠后,转大火收汁即可。
