夏巴塔面包
夏巴塔又叫拖鞋面包,这是一款带脆皮的意大利面包,皮香脆,内部湿软,一点也不油腻,越嚼越上瘾的欧包。内部气孔迷人,适合做三明治或者搭配浓汤一起食用。这种面包含水量大,所以在操作面团的时候要用到手粉。

Steps to make 夏巴塔面包

  • 1.先做液种:酵母溶于水
  • 2.加入面粉
  • 3.用筷子搅拌均匀
  • 4.盖上保鲜膜,室温发酵60分钟后,冷藏发酵16个小时
  • 5.将液种、水、油放入到厨师机的搅拌桶里
  • 6.加入盐
  • 7.加入面粉和酵母
  • 8.用东菱C08厨师机混合均匀
  • 9.放在撒在面粉的案板上
  • 10.每30分钟折叠一次,共折叠三次
  • 11.放在案板上继续发酵
  • 12.将面团分成两份,放在撒在面粉的不粘油布上进行最后一次发酵,发酵2倍大
  • 13.放进已经预热到230度的东菱K40C烤箱最下面一层,烘烤22分钟左右
  • 14.切开里面有迷人的气孔,外皮是香脆的
