Steps to make 京酱肉丝

  • 1.准备食材:里脊肉:500g,白胡椒:适量,料酒:适量,盐:适量,鸡蛋:1个,甜面酱:5勺,酱油:2勺,番茄酱:2勺、糖:10g 。将清洗干净的里脊肉切丝,加少许盐,白胡椒,料酒腌制入底味。
  • 2.准备食材:豆腐皮:适量。豆腐皮清洗干净切成大小适中的片入锅蒸制,开锅5分钟。取出后,在凉开水中浸泡备用,以防豆皮变干。
  • 3.准备食材:黄瓜:适量,大葱:适量,姜:适量。
  • 4.葱、姜切成丝泡水备用。
  • 5.所有准备工作作好后,把事先腌制好的肉丝加一个鸡蛋和适量干淀粉抓匀。
  • 6.锅中倒油,五成热倒入肉丝滑炒。肉丝入锅打散后就不要急于翻炒了,待挂的浆稍稍固定一下,再进行翻动,这样就不至于脱浆了。肉丝炒至变白色,说明已经至少八成熟。捞出控油备用。
  • 7.将黄瓜、大葱切丝。
  • 8.兑一个碗汁。5勺甜面酱、2勺番茄酱(番茄酱的加入可以使成品颜色红亮不发乌,且有增香的目的)、酱油:2勺、糖:10g、盐:少许(因前面腌制肉丝时我们已经加过盐,另外甜面酱也是有咸度的,所以此时加盐量适当减少)
  • 9.锅中倒少许底油,油热后倒入碗汁,再倒入适量的葱姜水,中火烧开,转小火熬制,不停地用铲子搅动以防糊锅。
  • 10.当酱汁变得粘稠时,将肉丝倒入,快速翻炒至酱汁均匀地包裹上肉丝,淋入少量水淀粉勾芡。关火后淋入香油,撒少许白芝麻。
  • 11.临近食用前,将豆皮从水中取出,沥干水份。取一块儿豆皮,包裹上适量的肉丝、黄瓜丝、葱丝。
  • 12.将豆皮卷起来,用香菜系好,不仅美观还增加了香菜的芳香,一举两得。
  • 13.京酱肉丝是一道色香味俱全的汉族名菜,用北方特有烹调技法“酱爆”烹制而成。
  • 14.咸甜适中,酱香浓郁,很美味的一道菜。
