材料多就用大烤盘,方形、圆形都可!
烤温烤时要根据自家烤箱调整,今儿用的85L,中途无需盖锡纸!
蛤蜊和虾,用小只一些的也可以,数量可以增加!
爆香蒜蓉的油可以多一些,成品汤汁多,更油润!

  • 大明虾6只
  • 蛤蜊14只

Steps to make 蒜蓉粉丝蛤蜊烤虾

  • 1.前期准备:蛤蜊加一小勺盐和芝麻香油,清水养上1-2小时,吐干净沙。金针菇切掉1-2厘米老根。大明虾剪去虾须。粉丝用温水泡发。葱、姜、辣椒等全部冲洗干净。蒜压成蒜泥备用。
  • 2.腌制大明虾:放一小把葱段、姜丝、1勺蚝油、1勺生抽、2勺料酒,适量黑胡椒粉,拌匀腌制20分钟。
  • 3.不粘锅中加小半锅水煮开,放入蛤蜊,葱段、1勺料酒焯水,蛤蜊开口后就捞出。
  • 4.烤盘垫2层锡纸,刷上一层玉米油。
  • 5.金针菇掰成小束铺底。
  • 6.铺上沥干水分的粉丝。
  • 7.摆上腌制好的虾和开口的蛤蜊。
  • 8.预热烤箱上下200度。不粘锅中加2-3勺玉米油,大火将油烧热后关火,倒入蒜泥翻炒爆香,然后加切碎的辣椒、2勺生抽、糖1勺、盐1勺、黑胡椒粉适量。
  • 9.利用余温翻炒均匀,均匀淋在虾和蛤蜊上,汤汁一起倒入。
  • 10.放入烤箱中下层,上下200度烤20分钟!
  • 11.出炉撒上葱花,鲜嫩多汁蒜蓉粉丝蛤蜊烤虾就大功告成啦!趁热吃,超香,鲜掉眉毛!
